Weekly Vegan Recipe
I decided Tuesday is going to be my Vegan Recipe day! I have so many ask me, "what do you eat?" So, I thought I would share a recipe with you to try out and see what us vegans eat! Enjoy!
Vegetable Burritos
Servings: 6
1/3 cup water
1 medium onion, chopped
1 medium red bell pepper, chopped
1/2 pound sliced mushroom
2 medium zucchini, chopped
10 ounces rot-tel choped tomatoes and green chilies, canned
2 cups fresh spinach, chopped
6 whole wheat tortillas
1. Place the water in a large frying pan. Add the onion and bell pepper. Cook, stirring occasionally for 5 minutes.
2. Add the mushrooms and zucchini and cook for 5 minutes longer.
3. Stir in the tomatoes and cook for another 5 minutes.
4. Add the spinach and stir until wilted, about 1 minute.
5. Place a line of the vegetable mixture down the center of a tortilla, roll up, and enjoy!
